Vegan Burger with Sweet Mustard Aioli {Flatout Recipe}

The thing about veggie burgers: I've had a lot of them.  Even before I went vegetarian, I loved ordering veggie burgers at restaurants and buying the frozen ones.  However, there is a huge difference between a veggie burger and a good veggie burger.
Great veggie burgers don't try to be something they're not.  I don't like veggie burgers that are "fake meat", because that's how they taste: fake.  I think a great veggie burger tastes like vegetables, and I love when I can see the ingredients in the burger!  My favorite frozen veggie burgers include Dr. Praeger's, Gardenburger Garden Veggie, and Amy's.  I also love making my homemade ones!

This vegan burger is awesome paired with an also-vegan sweet mustard aioli.  It's so easy to whip up and so great on Flatout's Foldit breads!

Vegan Burger + Sweet Mustard Aioli
serves 1
1 veggie burger patty
1/4 cup spinach leaves
1/2 tbsp vegan mayonnaise
1 tsp yellow mustard
1 tsp stevia, sugar, honey, or agave
pinch of dill

Thaw the veggie burger in the microwave or oven, then cook in a nonstick skillet with cooking spray until lightly browned on both sides.  Add the spinach to one side of the foldit, and put the veggie burger patty on top.  Mix the mayonnaise, mustard, and sweetener together until well combined, then add in sprinkles of dill as desired.  Spread on the opposite side of the Foldit.  Fold over the flatbread!

-Trader Joe's Reduced Fat Mayonnaise (vegan)
-Pure Via Stevia
